Most treats are baked hot and then stabilised with chemistry. We take the water out instead, which is the only preservative any of this needs.

Freeze-drying takes moisture out at low temperature, so the structure, smell and colour stay where they were. Dehydrating does it low and slow. Neither one fries anything.
